Peanut Satay Sauce

Makes 2 cups.

Ingredients2 TbspPeanut oil½ Onions, peeled and finely diced2 clovesGarlic, peeled and chopped1Red chilli, seeded and chopped1 TbspBrown sugar1 TbspDark soy sauce1Lemon, freshly juiced1 cupRoasted peanutsDirections
  • Heat oil in a saucepan, add onion and garlic and cook over a medium heat for 5 minutes until softened, but not coloured.
  • Add chilli, brown sugar, soy sauce and lemon juice and cook for 1 minute.
  • Puree this mixture with the roasted peanuts and 1 cup of cold water in a blender to form a thick paste.
  • Return paste to the saucepan and simmer for 5 minutes to reduce and thicken.
  • Satay sauce will last up to four days in the fridge. Gently reheat before serving.
  • Chef's tip

    Buy nuts in small quantities, as and when you need them. Nuts have a high natural oil content and this can turn rancid over time or with exposure to heat. To keep them fresh, store ground nuts in an airtight container in the fridge.

    Marinate the chicken for at least two hours.

    Mash the chickpeas with a fork and add the garlic, onion, cumin, coriander, parsley, pepper and salt.

    Mix well and then add the chickpea flour until you have a thick consistency adding a little more flour if required. You may also combine all the ingredients in a food processor to form a thick paste.

    With wet hands take one tablespoon of the mixture and form into balls.

    Put sesame oil, peanut butter, soy sauce, brown rice syrup or maple syrup and water into a small saucepan. Heat on the stove on low and stir the ingredients together until they have become smooth and sauce-like.

    Adjust the sauce to taste add more water if necessary. Add the sesame seeds and mix together. Enjoy served in a cup alongside your vegetables for dipping.

    In this recipe only use 2 tablespoons of sauce per serving 4 falafels and 2 tablespoons of sauce with salad.
