One thing I had to drop everything to do this week was watch the film Conclave.While I was raised Catholic, by no means am I religious anymore, but as a politics (and catty drama) junkie, even I was desperate to know all about the election procedural that takes place among the Catholic Cardinals to elect the new Bishop of Rome (better known as the Pope), following the death or resignation of the former.

And I wasn't alone. According to Variety, "viewership of "Conclave" spiked 283% on Monday as word of Pope Francis' passing spread throughout the world."

The 2024 Oscar-nominated film gave me everything I needed: politics, drama and a newfound understanding of the papal equivalent of the NBA draft. Conclave also reminded me that Isabella Rossellini is a fantastic actress. Her scene-stealing eight minutes as Sister Agnes had me craving more and well, down the rabbit hole I went.

As I was there, I learned that Rossellini comes from a major movie family. Her mother was actress Ingrid Bergman and her father was renowned Italian film director Roberto Rossellini. Besides talent, another thing Isabella inherited from her parents was her father's go-to spaghetti recipe. If you love simple food the whole household will love, this is one dish you have to try.

What is the Rossellini Spaghetti?

Elettra Wiedemann, the daughter of Isabella Rossellini, shared her family's iconic spaghetti recipe over on her food blog, Impatient Foodie. Now, don't think this is just another Italian celebrity pasta recipe, because it's not. According to Wiedemann, her grandfather and later her mother made this effortlessly tasty recipe "in the summer in order to help use up any leftover or excess herbs that might be around the pantry or kitchen."

And save food waste this spaghetti does. The recipe calls for a panoply of fresh, aromatic summer herbs, including basil, parsley, chives, sage, mint and oregano. It's similar to pesto pasta but instead of blending the herbs, they're finely chopped to help make sure you get a little of each herb with each twirl of pasta. Grated Parmesan cheese adds umami nuttiness.

If you don't have a backyard full of fresh herbs, no worries. According to Wiedemann, you can switch out a particular herb for what you do have and you can also use dried herbs, too. It's all Rossellini-approved.

How to Make the Rossellini Spaghetti

Start by boiling a big pot of well-salted water, then drop in a pound of spaghetti (or any long noodle) and cook until just shy of al dente. While the pasta is cooking, finely chop a bunch of herbs—basil, parsley, chives, sage, mint and oregano leaves. Toss the herbs in a large bowl with grated garlic, olive oil, lemon zest, grated Parmesan, salt and pepper.

Once the pasta's ready, drain and toss it straight into the herb mixture while it's still hot, letting the heat bring everything together. Add more cheese on top, perhaps some more oil and serve it right away. No sauce, no stress (of electing a new Pope - oops). Isabella Rossellini's family recipe is pure herby and cheesy goodness. Maybe that's why she bounced from the film after less than 10 minutes. She had some pasta waiting at home!

Cook the Pasta

Boil salted water and cook pasta until al dente. Reserve ½ cup of pasta water before draining.

Make the Sauce Base

Melt butter in a skillet, add flour, and whisk for 1-2 minutes to form a roux.

Add Garlic and Broth

Stir in minced garlic, cook until fragrant, then whisk in chicken broth and simmer.

Add Cream and Thicken

Pour in heavy cream and simmer for 2-3 minutes until the sauce thickens slightly.

Add Parmesan and Season

Stir in grated Parmesan until creamy. Season with salt and pepper to taste.

Combine Pasta and Sauce

Toss pasta into the sauce. Add reserved pasta water if needed for consistency.

Serve

Garnish with parsley and extra Parmesan. Serve immediately and enjoy
